The Daiquiri
As with many classic cocktails, the true history of the Daiquiri remains uncertain. However, legend has it that in the early 20th century, an American engineer named Jenning S. Cox was visiting an iron mine called Daiquiri in eastern Cuba and wanted to make a drink for one of his colleagues with the only ingredients he had on hand: lime, sugar and rum. By mixing all these ingredients together, they discovered a fabulous mixture and the famous Daiquiri was born for the first time.
This cocktail is both very simple and very complex. Indeed, it is simple because it is composed of only 3 ingredients – white rum, lime juice and sugar – however its complexity lies in a fundamental principle that is necessary to master to make this cocktail: the balance between the acidity of the lime juice and the sugar.

INGREDIENTS
Prepare in a shaker and serve in a coupette
- 2oz (60 ml) white rum (preferably Cuban)
- 1 oz (30 ml) lime juice
- 2 teaspoons white sugar
- Add all ingredients into a shaker
- Using a spoon, stir the mixture in the shaker to dissolve the sugar.
- Fill the shaker 3/4 full with ice.
- Stir
- Strain into a cocktail glass using an ice strainer and a pulp strainer.
