The Piper Mule
Here is the Piper Mule, a non-alcoholic cocktail from the Mule family. Characterized by its refreshing and spicy side, it is perfect to arm yourself against the cold of the Quebec winter.
INGREDIENTS

Prepare live and serve in a Mule cup (or a Collins)

- 1 oz (30 ml) orange juice
- 0.75 oz (20ml) lime juice
- 0.5 oz (15 ml) homemade pink peppercorn syrup (see recipe below)
- Ginger beer

METHOD OF PREPARATION

- Pour all the ingredients into the glass
- Add ice to 3/4
- Stir
- Top with crushed ice
- Finish by adding a slice of orange and a sprinkle of pink pepper.
PINK PEPPER SYRUP RECIPE

INGREDIENTS—
- 2 tablespoons pink pepper
- 500 grams of sugar
- 500 ml of water

METHOD OF PREPARATION

- In a saucepan, crush the pink pepper
- Add sugar and water and bring to a boil
- Let cool to room temperature, while letting the pink pepper infuse
- Once the mixture has cooled, filter, bottle and keep cool.
